Since Easter is coming up, I decided to make an easy cookie recipe. With all the hype on TikTok right now about Cadbury eggs, I chose to make Cadbury egg cookies. Growing up, Easter egg hunts around my house were a big tradition. Whenever I opened an egg and found gummy candy instead of chocolate, I would always trade with my siblings. That’s definitely where my obsession with those delicious chocolate eggs began, which is why I was so excited to try this recipe.
I used Melissa Stadler’s Chocolate Cadbury Egg Cookie recipe. It took around 20 minutes to prep and make, and 10 minutes to bake.
Recipe
1/2 cup Butter (softened)
2/3 cup Brown Sugar (packed)
1/4 cup Sugar
1 large Egg
1 teaspoon Vanilla
1 1/3 * cups Flour
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
(1) 10-ounce bag Mini Chocolate Cadbury Eggs
1/2 cup Milk or White Chocolate Chips (optional)
I love this recipe. It’s so simple because most of the ingredients are household ingredients that are usually already in the kitchen. I did add the chocolate chips, which I think were a good choice because they evenly distributed the chocolate taste throughout the whole cookie.
Making the cookies is simple; you just preheat the oven to 350°F. Cream butter and sugars, then mix in egg and vanilla. Stir in dry ingredients, then fold in most of the Cadbury eggs and chocolate chips.
Chill the dough if you have time. Roll into balls, place on lined baking sheets, and press extra Cadbury eggs on top. Bake 9–10 minutes until lightly golden, then let cool.
The recipe is meant to make 12 servings, but I decided to make the cookies smaller and roll them into 24 balls instead, which still made a good-sized cookie. The one thing I would change about the recipe is that I would keep the cookies in the oven for 13 minutes rather than 10 due to them coming out overly uncooked, causing me to have to put them back in the oven.
Overall, the cookies had the perfect level of sweetness, and the Cadbury eggs added a nice crunch. I would definitely recommend this recipe to any chocolate lover.
